Ingredient Notes

Tahini is the star, it replaces butter entirely and brings a rich, nutty depth, plus calcium, healthy fats and plant protein. Use a smooth, well-stirred tahini.

Maple syrup is the only sweetener and keeps the cookies moist and chewy. Don't swap for honey, the consistency changes.

Quick oats give the signature chewy texture and soluble fibre (beta-glucan) that supports your gut. No quick oats? Pulse rolled oats in a food processor.

Almond flour adds structure without weighing the cookie down, and keeps the recipe gluten-free if you use certified GF oats.

What You'll Need Makes approximately 12 cookies

  • ½ cup tahini

  • ⅓ cup maple syrup

  • 1 egg

  • ½ tsp salt

  • 1 cup quick oats

  • 3 tbsp almond flour

  • 1 block (100–120g) good-quality dark chocolate, roughly chopped

Method

  1. Preheat and prep oven to 180°C (160°C fan-forced); line a tray with baking paper.

  2. Mix the wet ingredients whisk tahini, maple syrup and egg until smooth and glossy.

  3. Add the dry ingredients stir in salt, oats and almond flour until a (thick) dough forms.

  4. Fold through the chocolate until evenly distributed.

  5. Shape the cookies heaped tablespoon scoops; flatten gently (they don't spread much).

  6. Bake 10–12 minutes, until edges are lightly golden. Centres will still look soft — that's right.

  7. Cool 5 minutes on the tray, then transfer to a wire rack.

Tips for the Best Tahini Oatmeal Cookies

  • Don't overbake pull them when the edges are just golden; they firm as they cool.

  • Chill the dough 10–15 min if your tahini's runny and the dough is sticky

  • Add flaky salt on top before baking-  sweet and salty wins.

  • Double the batch they freeze beautifully; bake from frozen, adding 2–3 min.

Storage

Airtight container at room temp up to 4 days, fridge up to a week, freezer up to 3 months (thaw 20 min before eating).

Variations

  • Vegan: swap the egg for a flax egg (1 tbsp ground flaxseed + 3 tbsp water, rested 5 min).

  • Add mix-ins: walnuts, dried cranberries or shredded coconut.

  • Swap the chocolate: white choc + macadamia, or a dark/milk mix.

Are these cookies gluten-free?

Oats are naturally gluten-free but can be processed alongside gluten grains. For strictly GF cookies, use certified gluten-free oats- the rest of the recipe is naturally GF.

Can I use a different nut butter?

Yes- almond or cashew butter both work (milder flavour). Peanut butter works too if you love it with chocolate.

Why is tahini good for you?

Tahini (ground sesame) is one of the best plant-based calcium sources, and is rich in healthy fats, B vitamins, magnesium and iron.

Can I make these without almond flour?

Yes- substitute extra oats blended to a fine flour, or 1 tbsp coconut flour (it absorbs much more moisture, so use less).
